I was parked up by the coast and the local fresh seafood shack was selling fresh lobster. Here is what I made in the van during storm Nicole!

📖 The story behind this dish

One of my favourite places to park up in the van is down by the coast. When I came across a local seafood shack selling catch of the day I couldn't help being drawn to the fresh lobster. How decadent would it be to cook lobster in a campervan. I had to do it because I'm a total show off at times.

1Lobster (Live if you are brave or if precooked reduce cooking time by 10 minutes)
200g Coconut Milk (Full Fat)
1Lemon
2tbsp Sweet Chilli Sauce (The bottled type (Blue Dragon))
1tsp Cayenne Pepper
1tbsp Parsley (Fresh or Dried)
1tsp Salt
1cup Water
1tsp Garlic Granules
1cup Chedder Cheese
1tbsp Tomato Paste (Puree)

Serve it in a large bowl with the lobster sitting on top and the bisque surrounding it.  Don't forget to crack open the claws for the delicious meat inside.
