1tbsp thyme (fresh/dried)
150g Shiitake mushrooms
250g Chestnut mushrooms
1Vegetable stock cube
1cup Boiling water
2tbsp Tomato puree
1tbsp Brown sugar
2tbsp Cornflour
15ml Soy sauce
Salt & Pepper to season
Vegan ale
400g Vegan ready rolled pastry
Olive Oil for frying

Make sure your filling has cooled slightly before spooning it into the pastry — a hot filling can make the base go soggy before it has a chance to crisp up. Low and slow is the key with the Omnia; resist the urge to crank the heat!
