250g Shiitake mushrooms
100g Button mushrooms
200g Cannellini beans
400g Chopped tomatoes
250ml Vegetable stock
2tbsp Nutritional yeast
1portion Broccoli stems / asparagus spears
250g Quinoa macaroni tubes
Chopped chives (to garnish)

If you can't find quinoa macaroni, regular macaroni works just as well — just adjust the cooking time accordingly. This soup thickens up nicely the next day, so it's perfect for making ahead on the road!
