For the Butternut Squash
1Butternut squash (cut into 2cm cubes)
1tsp Cumin
1tbsp Smoked Paprika
Cavolo Nero
For the mash
6Potatoes
2tbsp Vegan butter
1cup Vegan cheese
Salt & pepper to season
For the dressing
1Mango
2tsp Apple cider vinegar
1dash Oil of your choice
1Lime
1Chilli (depending on desired level of spice)

Chop your squash into even 2cm cubes so everything roasts at the same rate in the Omnia. The mango dressing can be made ahead and stored in a jar — it keeps well even without a fridge for a few hours!
