1Small white onion
8oz Mexican cheese blend
6oz Light cream cheese
1tbsp Cumin
tsp Crushed red pepper flakes
tsp Chili powder
1tsp Garlic powder
1tsp Salt
1tsp Cayenne
2tbsp Hot sauce
24Pre-made empanadas dough rounds
1tbsp Water
6tbsp Achiote oil / oil infused with peppers /vegetable oil
Salsa / guacamole / sour cream (to serve)

Make the filling the night before and store it in the fridge — assembly is much quicker the next day. These also reheat beautifully in a dry pan if you don't have an oven on board!
