Our family loves chocolate! And we also take it on the road. We find the best local chocolate wherever we happen to be and then use it to create this delicious on-the-go treat.

Veggie burrito / tacos

I take back what I said about eggs being the perfect food. In fact, burritos are the perfect food First of all, you can make ANYTHING into a burrito. I’ve even made burritos out of peanut butter, apples, and trail mix. Because let’s face it, everything tastes better when it’s wrapped in a delicious flour tortilla. Premade burritos are an excellent trail food because they are super filling, very portable, and pretty cheap depending on what you put in them. A basic rice, veggie & cheese burrito can cost less $3 per portion and is one of the most nutritious meals you can eat. They can be made in one pot and enjoyed immediately, or wrapped up in tin foil for a summit snack. You can also easily modify this recipe to make tacos instead!

Easy Ramen Noodle Soup

Instant Ramen is not only incredibly cheap, but it’s durable, lasts forever, and those salty noodles are super satisfying. We’ve dressed it up a little to make it more filling and nutritious, but still kept the cost down with this recipe. You can use any instant ramen you prefer, and we recommend trying a brand from an Asian market, as the noodles are much better. Maybe you can even break out your chopsticks for this one!

Dandelion salad

This simple salad is easy to make and the eggs could be cooked in a pan on an open fire if outdoors. Also, everyone loves to forage.

Feta Orzo Salad

Just an amazing summer cold dish, full of fresh/raw ingredients prepared in absolutely no time. The main ingredient is orzo, which is basically pasta in the shape of rice, which pairs perfectly with the vinaigrette & fresh veggies.

Cook Free Couscous Salad

Couscous is readily available throughout Chile, and is also the only carbohydrate I know of that doesn’t need to be heated. This comes in handy if you’re looking to save on gas, or if you don’t have a cooker.

Simple Flat Bread Pizza

This is one of my favourite quick lunches to have in the van. Personally I love the simple margarita but you have endless options to add for additional toppings

Spiced Red Lentil Mini Burgers

A burger-less burger. That’s my idea of heaven. I’m a vegetarian and I don’t eat bread so I am just used to avoiding burgers altogether. These little micro burgers are so useful for bite sized sustenance you can grab and eat when you are busy. They can be made ahead of time and store well in the fridge. Likewise you can freeze the ‘dough’ to make them quickly at will, handy for spontaneous camping trips or BBQs. The addition of quinoa makes them hearty and filling, and their size makes them versatile for snack boards or picnics or sliders. They make a great lunch spread with Handmade Hummus, Summer Tomato Salad and Golden Flatbreads.
