Sweet potato and butternut squash tagine

  • 1 Onion
  • Oil
  • 2 tsp Cumin
  • 2 tsp Ground coriander
  • 1 tsp Chilli flakes/powder
  • 2 tsp Garlic paste
  • 1 Butternut squash
  • 1 Sweet potato
  • 1 Sultanas
  • 3 cup Veg stock


  • Fry onion in oil until soft, add spices and cook for a further 2 mins.
  • Add garlic paste, stir then add butternut and potato. Stir to coat.
  • Add stock and sultanas. Cover and cook on low heat until veg is tender.
  • Serve with cous cous and/or naan bread
