Sweet potato and butternut squash tagine
Ingredients
- 1 Onion
- Oil
- 2 tsp Cumin
- 2 tsp Ground coriander
- 1 tsp Chilli flakes/powder
- 2 tsp Garlic paste
- 1 Butternut squash
- 1 Sweet potato
- 1 Sultanas
- 3 cup Veg stock
Instructions
- Fry onion in oil until soft, add spices and cook for a further 2 mins.
- Add garlic paste, stir then add butternut and potato. Stir to coat.
- Add stock and sultanas. Cover and cook on low heat until veg is tender.
- Serve with cous cous and/or naan bread
