Rolo Overload Brownies – Omnia Style.

After giving up chocolate for lent I knew I wanted to bake something super indulgent super chocolatey for Easter Hence the Omnia style rolo brownies were born. As if a chocolate brownie wasn't indulgent enough this is jam packed full of rolos and covered in a delicious toffee sauce. Dark chocolate gives this recipe a real richness so even if you are not a fan of dark chocolate, don't substitute as you won't get the same result and it doesn't taste of dark chocolate. *Please note you will need a freezer for this recipe*

Vegan Mushroom & Ale Pie – Omnia

This vegan mushroom & ale pie is a team effort from our featured vanlifers @rvhomesoon. No oven? No problem. The Omnia oven means pie is definitely on the menu in this campervan.

Omnia Cannelloni

Cannelloni with ricotta and spinach!!....simple to do in our van. The bechamel can be substituted with cooking cream. The meat sauce can be replaced with a vegetarian sauce

Swedish G&T Yorkshire Pudding

Yorkshire Pudding cooked in a Swedish Omnia, with a Gin & Tonic Twist

PIZZA with omnia oven!

As good Italians we couldn't help but try to make pizza !! Super easy to do, and super fast! Only 1 hour of leavening/proving. The video can be found on our Instagram page! @vwt4_furbone_ Remember to grease the stove well with oil, so it will come off perfectly, at least if you have no silicone element.

Banana & Nutella Omnia cake

We love using leftover bananas to make cakes. Without an oven in our van, the Omnia oven makes that all possible. In this one I decided to swirl some nutella through it for extra indulgence (not sure our waistlines appreciate it though!)

Curried Tofu Noodles

This little bowl just bursts with coconut curry flavours. It's quick and easy to make and use your favourite stir-fry veggies or whatever veggies you have leftover in the fridge. Our version here is protein packed and makes two medium bowls.

Butternut Squash Vegan Lasagne

After cooking this, we sat and ate it in silence! We scoffed it down! So tasty! Definitely one of our new favourites!

Frittata – Using up your veggies

Fritatta's are a great way to use up any leftover veg. Choose any toppings as you like, but remember, the softer the toppings, the quicker the meal. Some topping combos we like: * Mushroom, Broccoli and Feta. * Tomato, Mushroom and red onion. * Cherry Tomatoes, Onion and Basil. * Multicoloured Peppers and Feta.

Shakshuka – A vanlife must!

A definite favourite when it comes to vanlife breakfast or brunch! *You can use normal eggs, but they will take a bit longer to cook, and you won't need as many*

Quick creamy salmon pasta

This is a really simple dish to add more or less of the main ingredients, such as the pasta and smoked salmon, you can also fry different mushrooms with a little garlic paste to make it a veggie dish. I use different veg depending what I have, such as green beans, peas and sweetcorn
