Ridgemonkey sandwich toaster

The ridgemonkey is something we use regularly in our van. When we first bought one (as we thought every van kitchen seemed to have one!) we were surprised by how small it was. We bought the Compact XL sandwich toaster. Due to this we hardly used it for a long time. Then we discovered it’s true potential!! We use it so much now, we have made omelettes, hotpots, brownies and all sorts of delicious things in ours. A great present for a solo vanlifer as you can cook perfect portion sizes for one person. Coming up first is something we use in our van regularly. We tend to use it for baking cakes, bread, pies and have found it really useful. Next up on the list is a different kind of oven! The wonderbag is a thermal non-electric slow cooker. For those worried about increasing energy costs this may be a good Christmas gift. It can be used for houselife as well as vanlife. You use it by starting off the cooking process then placing the pan in the wonderbag. It needs to be a good thick pan that will hold the heat well. The oven keeps it warm and carries on the cooking process. We have made stews in ours and even some beef which was cooked to perfection. It can also be used to keep things cool, so is multipurpose. This pan is a great vanlife essential, even if it’s not a Christmas gift. This is a multi-purpose pan which makes it great for vanlife. You can fry, deep fry and even steam in it. Creamy pepper sauce with mushrooms

I like to serve this creamy pepper sauce with mushrooms over a freshly roasted piece of beef. However, the sauce itself is vegetarian. You can put it over pretty much anything. In fact it’s so tasty you may want to even eat it on it’s own! You can find my other recipes here.

This goes well with with a meaty dish The key to getting the most “pepperiness” from your peppercorn sauce is to toast the pepper gently with the mushrooms and garlic before adding the cream. Fresh thyme, bay and a squeeze of lemon add all the right flavours and you’re done.

Ingredients
  

  • 2 tbsp Butter
  • 2 Garlic cloves finely chopped
  • Mushrooms
  • 2 tbsp black pepper fresh cracked
  • 1 Bay leaf
  • 2 Sprigs fresh thyme
  • 2 cup Whipping/heavy cream
  • 1/2 lemon juice only
  • Salt to taste

Instructions
 

  • Melt the butter in a frying pan then add the mushrooms and saute until soft.
  • Add the garlic and cook for another 30 seconds before adding the pepper and herbs.
  • Gently toast the pepper until fragrant then pour in the cream.
  • Season with lemon juice and salt and allow to simmer gently for 10-15 minutes until the sauce has reduced and thickened to your preference.
  • I serve this with meat, so roast a piece of meat of your choice, I prefer beef. Serve.

Notes

Don’t let that lemon rind go to waste once juiced. Use it to clean your stove top, add to water for some flavour or even clean tea / coffee pots.

Game-Changing Campervan Kitchen Gadgets

Let’s be honest—cooking in a campervan can be a challenge. Space is tight, power’s limited, and somehow an essential always goes missing mid-stir. But after years of full-time vanlife (since 2018!), I’ve tested loads of gear and figured out which gadgets are actually worthy of the cupboard space.

Here’s my guide to my absolute favourite campervan kitchen gadgets—the ones I use constantly, from my first cuppa to that cheeky glass of red at night.

1. The Manual Blender

Brand tested: Piranha (also rate the Zyliss)

This gadget is ridiculously simple—no power, just a pull-string and five blades. It’s cheap, compact, and it works. Want to chop onions without tears or mess flying behind every nook and cranny? Well here we go. It’s brilliant for sofrito bases, coleslaw, pasta sauces, and so so much more.

  • Doesn’t need electricity

  • No knife skills required

2. RidgeMonkey Compact XL Sandwich Toaster

Heard of RidgeMonkey? Of course you have! But this compact, non-stick, flip-it-like-a-pro sandwich toaster is more than just toasties. Frittatas, omelettes, even flipping a pizza-like snack—it’s a pan with storage and usability in mind.

Pro tip: Get the induction version if that suits your setup!

3. Magnetic Knife Strip + Proper Knives

No more blindly reaching into drawers and slicing your fingers. A magnetic knife strip keeps things visible and safe. I use it for knives, tongs, peelers—any metal gadget will stick!

As for my knives I use Savanake knives but if you look after your knives you can get away with a cheaper brand. A good sharp knife will give you a safer and more enjoyable experience in the kitchen.

  • Tesco Go Cook – Cheap (£15-ish) but shockingly good.

4. A Multifunction Pan FlavorStone

Having a pan that replaced 5 other pans was a huge space saver for me! After 5 years of using my Flavorstone pan I still rate it as my favourite go to pan!

6. The Wine Rack (No Judgment Please)

Look, I don’t drink and drive—but I do cook with wine, and occasionally drink it responsibly too. This wall-mounted rack keeps things tidy and stops bottles rolling around. Practical and looks great too!


7. Silwy Magnetic Glasses (Yes, Actual Glass in a Campervan)

Forget those ugly plastic “glasses.” These magnetic crystal wine glasses stick to the ceiling. The actual ceiling. Through potholes and Stonehenge bumps, they don’t budge. Theres something special about drinking wine from a posh glass in a campervan.

I use it for whisking egg whites, cream—basically anything that needs volume without arm cramps. Mine’s a Salter one from Argos. Simple. Cheap. Effective. Forearm saver.


9. Niche 7-in-1 Kitchen Tool

This is an amazing product! Peel, slice, grate, julienne, crinkle cut—it does it all. One tool, barely any storage needed. Great for making fun crinkle chips for the kids (or the kid in you).

10. Omnia Stovetop Oven

Don’t have a built-in oven in your campervan? This is the gadget you need to put favourites such as roast potatoes and pizza back on the menu. Works on a gas stove and makes:

  • Pizza

11. The Cobb BBQ/Oven (The Best Outdoor Cooking Grill)

This one is for cooking outside. The Cobb is compact, versitile and lets me roast chickens, grill burgers, stir-fry veggies—you name it. The heat stays inside, so even windy days aren’t an issue. Wind proof outdoor coooking…. I’m serious!

12. Wonder Bag (Slow Cooker Without Power)

It’s basically a thermal oven. Bring your stew or curry up to temp on the stove, pop it in the bag, and walk away. Come back hours later to a hot, slow-cooked meal. No extra power used. We love this product so much!

SketchUp vs VanSpace – Which Is Better for Designing Your Van Conversion?

This van is our 4th build, so we’ve tried quite a few different van conversion design tools over the years. We started out with SketchUp first, which was great once you got the hang of it, but after using VanSpace, we found the whole process a lot smoother. The design stage is a really fun part of the process and VanSpace makes this part a lot of fun! If you’re planning a van build and want to go from idea to layout without hitting a wall, VanSpace is the tool I’d recommend.

It’s simple to use, packed with features, and doesn’t take hours to figure out. It’s ideal for visualising your layout and designing your van is certainly part of the fun!

Why We Chose VanSpace Over SketchUp

When we designed this van, we needed a layout that could work for four people, but also function for solo travel. A lot of my time in the van is spent on my own, exploring and cooking, so having a well-planned kitchen and efficient storage was essential.

VanSpace made that part easy. It’s got pre-loaded van models, drag-and-drop accessories and furniture, and great built-in measuring tools—so you can test out different layouts in just a few minutes.

SketchUp, on the other hand, took way more time to learn and wasn’t geared specifically for vans. Really it’s and application for pro modelling.

Ease of Use and Workflow

VanSpace

VanSpace is built for van conversions, so it’s ready to go from the moment you log in. You select your van model from the list (which includes most popular makes and sizes), and then start designing.

Here is what you can do:

  • Drop in beds, cupboards, water tanks, gas hobs, sinks and fridges
  • Resize or move items to match your real-world layout
  • Toggle between 2D and 3D views
  • Export your final layout for reference during the build

For someone who wants to get a clear layout quickly and accurately, it’s the best tool I’ve found so far.

SketchUp

SketchUp is powerful but less specific.

You’ll need to:

  • Source or build a 3D model of your van
  • Search for and download furniture models from the SketchUp 3D Warehouse
  • Manually scale and position everything
  • Learn some of the interface basics before you can get going

It’s a solid option if you enjoy 3D modelling or need very specific custom dimensions, but it’s definitely more time-consuming.


Vanspace is great software for designing a van.

Our Kitchen Layout

One of the key reasons we preferred VanSpace was how easy it was to trial different kitchen configurations.

This is what we were able to do:

  • See how deep our worktop could be without blocking walkways
  • Place our fridge and make sure there was enough ventilation space
  • Test how much cupboard storage we’d realistically fit above and below

These adjustments took minutes in VanSpace, while the same edits in SketchUp took longer and often meant re-aligning everything manually.

If you’re building a layout around a specific lifestyle—whether that’s full-time van living, part-time road trips, or solo travel—it helps to be able to quickly visualise multiple versions. VanSpace made that part easy and accurate.

Use VanSpace if:

  • You want a simple, visual way to plan your van layout
  • You need a quick start with no design background
  • You value having access to pre-loaded van models and furniture
  • You want to focus on layout and function, not design software

Use SketchUp if:

  • You have 3D design experience
  • You want full control over every detail
  • You’re comfortable sourcing or creating your own van model

If you’re just starting out or want to get your layout right the first time, VanSpace takes out the guesswork. It helped us turn our ideas into a real plan, which meant less second-guessing and fewer changes once the build started.

To be totally honest, designing your van is a fun part of the overall process. Vanspace is a fun application to use and lets you build a variety of desgn ideas so that you can work out which you prefer.

  • Find a Recipe: I always like to preplan by jotting down my recipe or looking up a recipe so that I am fully equipped once the Cobb is fired up. With lithium batteries becoming more affordable, the rise of fully electric powered campervans has made induction hobs more popular than ever. But is ditching gas really the way forward?

Let’s break it down properly—pros, cons, costs, and share our real-life experiences of cooking in a campervan.


Induction Hobs

Induction hobs are popping up in new builds everywhere, and there is good reason for it.

Why is Induction Great in a Campervan?

No open flame = No risk of burning your van down while flipping pancakes.
Fast cooking = Instant heat, instant off, this helps bringing pans to temperature quickly and efficiently.
Safer for small spaces = No gas leaks, no carbon monoxide worries!
No LPG stress abroad = Gas refills can be challenging when traveling abroad.

Sounds like induction is a no brainer right? But here’s the reality check…

The Downsides of Induction:

Power-hungry – Even with a big lithium battery, an induction hob can eat through your power supply pretty quickly!
Sun-dependent – Winter vanlifers, (and British vanlifers) take note: When there is no sun, your solar panels don’t charge as well, and suddenly power becomes very precious. Boiling your kettle for a hot cuppa on a winter morning may be off the menu!
Battery stress – Even a chunky 400Ah lithium battery (like mine) feels the strain when you rely solely on electric cooking.

Let’s Talk Power Consumption

Induction hobs are energy-efficient compared to traditional electric stoves, but that doesn’t exactly mean they’re camper-friendly.

Let me be realistic here, you will not be cooking on full power for 3 hours. You are likely to be cooking for 20 minutes on a high heat or 1 hour on a very low heat to simmer. And unless you are rapunzel will you really blow dry your hair for 30 minutes?

So 3 meals cooked on the hob, 3 boils on the kettle and one 10 minute blow dry will take your 400ah battery down by about 50%. With some charge from a good drive (with the correct B2B installed and some solar) you should recoup most of that back. In the winter less so.

For off-grid campers, induction is amazing in summer but a struggle in winter, unless you have a serious solar + battery setup.

What’s My Setup?

Even with a massive 400Ah battery, I still prefer cooking with gas. Here is why?

  • I am rarely on an electrical hookup as I travel full-time
  • I love the way gas cooks food—it feels more natural to me and I feel I have better control.
  • It’s way more energy-efficient for full-time vanlife.
  • Refilling my 11kg gas bottle costs me about £36 every 6-8 months, which is nothing compared to the stress of power management.
  • I live in the UK and winter vanlife can write off solar panel charging.

Yes, induction is cool, modern, and stress-free. But when I’m off-grid in the middle of nowhere, the last thing I want is to ration my battery just so I can make a cup of tea.

So cream first of jam first? The truth is that both options work and give the same results but it’s how you want to go about it that is the question. What do you prefer? What makes you feel more comfortable? What can you afford? What do you need?

For the campervan weekend warrior you are very likely to be jumping from campsite to campsite so why not go hassle free and use a hookup to power your induction hob. If you go off grid a lot then you most probably want to stick with the classic gas hob.

Pancakes are a great food at any time of the year, they are easy to make, don’t require too many ingredients and go with many different flavours and toppings. Pancakes are traditionally eaten on Shrove Tuesday across many parts of the World. They are cooked and eaten as a way to use up rich ingredients before the fasting period of Lent – That definitely includes Nutella 😉 In some countries Shrove Tuesday is known as Mardi Gras, which translates to Fat Tuesday. So make the most of it and get those pancakes loaded high.

Let’s kick things off with these INCREDIBLE fluffy pancakes. They are the things dreams are made of, little mouthfuls of cloudy heaven. When you imagine a stack of pancakes drizzled in syrup and fruit, these are the bad boys you are thinking of. One of the best things about this recipe is that it’s actually vegan, so is also great for those who are dairy free. The only decision left to make, is what to add on top….

Ok so we did it! We finally found a campervan air fryer thats worthy of space in the Vanlife Eats tiny kitchen!

Cooking in a campervan is all about finding the perfect balance between functionality and space. After years of testing the usual brands, I finally found one that ticks all the boxes: the Our Place Wonder Oven. This little beauty had me buzzing with excitement the moment I saw it. In this review, I’ll share my hands-on experience with it, why it’s perfect for campervan living, and a few surprises I encountered along the way.


First Impressions – A Beautiful, Thoughtful Design

I’ll admit it — I’m a sucker for good branding. The Wonder Oven immediately caught my eye with its pastel colours: soft blue, baby pink, and eggshell. It immediately felt like it was made to match the Nordic beach style of our campervan kitchen. Every detail, from the colour-matched grill pan to the modern branding, feels thoughtful and well-made.

Unboxing it was a exciting! Like Christmas returning! Inside, I found a recipe booklet, a handy user manual, and accessories that are as functional as they are stylish. It’s rare for a gadget to tick both form and function, but this one did it effortlessly. My expectations were officially sky-high.


Installation – A Practical Fit for Van Life

Getting the Wonder Oven set up was straightforward, but it did require some rearranging in my campervan kitchen. With the dimensions clearly listed on the website, I was able to plan ahead and make some room. Clearing out random items (bye, containers, unused gadgets and silly little pots) actually felt liberating, and I was surprised how neatly the oven fit into its new spot. Once it was in place, it looked like it belonged there and matched the decor of the van.

Test 1 – Air Fryer Recipes

The first recipe I tried was my own creation of cheese and tomato chicken popcorn. It turned out perfectly — crispy, juicy, and absolutely addictive. The cooking process took just 18 minutes and used around 6-7% of my 400Ah battery, which is incredibly efficient, especially during the colder months when power conservation is key.

Test 2 – The Pizza Challenge

Next up, the mighty pizza test. Getting great pizza in the campervan without an oven has always been a challenge. Skillet pizzas are “ok” but I really have missed baked pizzas. My outdoor Ooni oven works great, but inside? Ha! That would almost send the van up in flames! The Wonder Oven’s bake mode produced a pizza with a crispy base, bubbling cheese, and a perfectly airy crust in just 10 minutes. It used about 11% of my battery, which is a trade-off I’m happy to make for such excellent results.

With a power draw of 1,400W, the oven is manageable, even during the winter months when solar input is limited. My setup handled it with ease, and I expect it will be even more efficient in summer when the sun is more cooperative.

  • Stir in ginger and crushed garlic and cook for 1 minute. Add the tomato and sauté until softened.
  • Pour in the beaten eggs and season with salt. Stir occasionally to scramble.
  • Garnish with coriander and serve with chapati or bread.

  • 1 cup Gram Flour
  • 1 Sweet Potato
  • 1 tbsp Garam Masala
  • 1 tsp Cumin
  • 1 tbsp Ground Coriander
  • 1 tsp Tumeric
  • 1 tsp Chilli Flakes
  • 1 tsp Corn Flour or ground arrowroot
  • 2 tsp Salt
  • 1/2 cup Fresh Coriander
  • 3 tbsp Water
  • 1/2 cup Oil of your choice

Instructions
 

  • In a bowl mix together the flours, spices and 1 tsp of salt. (save the coriander)
  • Slowly add water and mix until it forms a smooth and thick batter
  • Slice the sweet potato into thin medallions
  • Heat a pan and oil to a medium heat. Drop a tiny bit of the batter in the pan and look for a gentle sizzle
  • Carefully dip the sweet potato slices in the batter and make sure each one is covered
  • Fry a few at a time being careful not to crowd the pan. They will take about 3-4 minuteds on each side. Cook until golden on both sides
  • Sprinkle the pile of cooked Sweet Potato Pakoras with fresh coriander and an even sprinkle of salt

  • 4 Eggs
  • 1 tbsp Olive Oil
  • 1/2 Onion Sliced
  • 1 Garlic Clove Crushed / Minced
  • 400 g Tomato
  • 1 tbsp Paprika
  • 1 tsp Cayenne Pepper
  • 1 tsp Cumin Powder
  • 1 Pepper Sliced
  • 1/2 Cup Fresh Coriander
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 1/2 cup Spring Onions

Instructions
 

  • Heat a tablespoon of Olive Oil in a skillet pan
  • Add the sliced onion, pepper and garlic. Saute until soft.
  • Add the tin of tomatoes, cumin, cayenne pepper and paprika and cook for 5 minutes until fragrant.
  • Make 4 wells in the sauce evenly spread in the pan and break a whole egg into each well.
  • Season with salt and pepper.
  • Cook on a medium heat until the eggs are at your desired consistency.
  • Garnish with fresh coriander and spring onions.
  • Enjoy a warming and tasty brekkie on a fresh and chilly morning.

Notes

Place a lid on the pan if you want to speed up the cooking of the eggs.

  • 2 cups Warm water
  • 1 tbsp Softened butter
  • 2 tsp Salt
  • 2 cups Masarepa pre-cooked corn flour
  • 1 cup Parmigiano reggiano cheese
  • 1/4 cup Olive Oil extra virgin
  • 1/2 cup Mozzarella cheese

Instructions
 

  • In a bowl mix hot water, butter, and salt until everything has dissolved and melted.
  • Gradually add masarepa flour and the parmigiano cheese and mix until a soft dough forms. It will feel like play foam.
  • Let the dough rest for 2-5 minutes. Adjust consistency if needed.
  • Split into small equal flat discs and make an indent in the centre.
  • Take one and fill the centre with mozzarella cheese and place a second disc on top as a lid. Carefully seal around the edges and in the palm of your hand shape the dough into a patty. Use your thumb to flatten the sides to make it look a bit like a puck.
  • Heat oil in a skillet over medium heat. Cook arepas 5-7 minutes per side until golden.
  • Serve whilst they are warm and the cheese has melted.

Notes

Enjoy freshly made arepas with a crunchy exterior and melty cheese inside.

Vanlife Festivals in the UK

There is an amazing variety of Vanlife festivals to attend this year. If you are interested in Vanlife, campervans, motorhomes, overlanders, 4x4s and offgrid living then you should certainly put some of these in your diary!

Living vanlife or traveling in a campervan has become very challenging in the UK, with more and more height barriers going up and local authorities putting restrictions on overnight parking it is making owning and using a campervan quite difficult.

As a fulltime vanlifer, I love to travel around in my LWB Sprinter parking at scenic locations, exploring food and cooking with a view, but the last two years I have seen more and restrictions appear on my favourite spots.

Unless you hop from campsite to campsite, the UK can be really challenging to find a good parkup now. Even the parkup apps are massively out of date.

So how to live vanlife in the UK?

This is where the events come in to play. You get to meet you new people who share your interests and mindset, get inspired by amazing van builds, get inspired by peoples lifestyles, learn technical and van build techniques as well as enjoy a huge variety of activities and workshops. Often cheaper than staying on a campsite too!

That is an awesome reason to get or build a van and head off to all the events! You can easily fill your diary with a selection of events and meetups and do the vanlife circuit.

Absolutely not! As an organiser myself I can assure you that most of the organisers of vanlife festivals have a great relationship with one another and we often chat and ensure we bring a variety of lore and entertainment to each show.

What is the best UK Vanlife Festival?

Everyone likes different types of events, be it a large event or a small event there really is something for everyone. I have spoken to a lot of people who love the small meetup type events as well as speaking to people who love the huge shows fully loaded with vans. They are all really good festivals with a lot of love and personality put into each show.

  • 1/2 cup Popcorn kernels
  • 1 tbsp Butter
  • 4 Biscoff biscuits
  • 1 Banana
  • 2 Sponge cupcakes plain or chocolate
  • Jar of Biscoff or cookie spread
  • 1 tbsp Almonds Chopped
  • 1 tbls Pistachios Chopped

Instructions
 

  • Roughly break up your biscuits or smash with a rolling pin into a mixing bowl. Break your cupcakes into small bite size pieces and add them to the bowl.
  • Using a pan on a medium heat or two sieves clipped together over, and open fire add the nub of butter and your kernels and toast until they have all popped, you will need to constantly shake the pan/sieve so not to burn the popcorn.
  • Take off the heat and leave to one side. Gently toast in a dry pan your almonds and pistachios then add to the popcorn to cool. 
  • Peel and slice your banana. 
  • Take your bowl of cakes and biscuits and add the nuts, banana, most of the popcorn and gently mix together so you don’t mush the banana.
  • Place the mixture into your jar but make sure you don’t compress it as it will need some gaps. In a saucepan add 3 to 4 generous tablespoons of the spread and heat very gently until it has become a liquid. 
  • Pour most of the sauce gently over your mix, add some more popcorn then drizzle with a little more sauce.
