Equipment

  • Pan

Ingredients

  • 1 tin Sweetened condensed milk (397g)
  • 600 g White chocolate
  • 2 tsp Lemon extract
  • 8 Meringues (crushed, keep 2 aside to sprinkle over the top)

Instructions

  • Line a square or rectangular tin with greaseproof paper. A 7×10" tin is perfect.
  • I like to break the chocolate into little squares before starting to get prepared.
  • Pour the condensed milk into a heavy bottom pan over a low heat.Stir regularly so that it doesn't stick.
  • Add the lemon extract and pieces of white chocolate, and keep stirring.
  • The mixture will start thickening up, and clinging to the base of the pan. Take it off the heat and stir through 6 of the broken meringues.
  • Pour into the lined tin, and sprinkle over the broken meringue lightly pressing them down into the mixture.
  • Leave to chill for a few hours in the fridge or overnight on the side if you don't have a fridge.
  • This is best stored in a fridge where possible, or it will become sticky.
