This white chocolate and lemon meringue fudge recipe is absolutely divine! It’s hard to beat fudge, but add some lemon and meringue and it takes it to the next level. The white chocolate adds a creaminess, while the lemon adds a zing and the meringue adds a lovely crunch!
I made a batch of this white chocolate and lemon meringue fudge to bring to Campervan Campout 2025. It went down really well with people of all ages, and luckily I managed to stop Mark from eating it all!
Making fudge in the van is so easy! Doing a version with condensed milk and white chocolate means you don’t have to worry about messing around with thermometers. It’s almost a foolproof recipe.

Lemon Meringue fudge
Equipment

Ingredients
- 1 tin Sweetened condensed milk (397g)
- 600 g White chocolate
- 2 tsp Lemon extract
- 8 Meringues (crushed, keep 2 aside to sprinkle over the top)
Instructions
- Line a square or rectangular tin with greaseproof paper. A 7×10" tin is perfect.
- I like to break the chocolate into little squares before starting to get prepared.
- Pour the condensed milk into a heavy bottom pan over a low heat.Stir regularly so that it doesn't stick.
- Add the lemon extract and pieces of white chocolate, and keep stirring.
- The mixture will start thickening up, and clinging to the base of the pan. Take it off the heat and stir through 6 of the broken meringues.
- Pour into the lined tin, and sprinkle over the broken meringue lightly pressing them down into the mixture.
- Leave to chill for a few hours in the fridge or overnight on the side if you don't have a fridge.
- This is best stored in a fridge where possible, or it will become sticky.
