Grated Cheddar Cheese (use your discretion)

Cornbread recipe (top chilli and cheese with enough mix to leave room for cornbread to rise and bake)

Jalapeño to top if desired

This works brilliantly in an Omnia oven on your gas hob — no need for a campsite with electric hookup! Let it rest for 5 minutes before serving so the cornbread topping firms up nicely.
