This is a finishing oil I genuinely reach for. Balanced rather than aggressive, with a gentle sweetness and a clean, lightly peppery finish. It’s the sort of oil that improves a dish without stealing the spotlight which is exactly what you want in a small kitchen.

Best uses:

  • Bruschetta with tomatoes on toasted sourdough

  • Simple salads like caprese

  • Grilled vegetables (aubergine, tomatoes, asparagus)

  • Finished over white fish with herbs and sea salt

  • A few drops stirred through soups just before serving

Buy tip:
Pair it with a good red wine vinegar or proper balsamic rather than a sweet glaze,  this oil shines when acidity is kept clean and sharp.
