We all love our RidgeMonkey pans and one of my favourite things to cook in it is a simple sausage roll. You cant beat a local sausage wrapped in puff pastry!

Cut the puff pastry sheet to the same width of the sausage leaving enough length to be able to wrap each sausage leaving a seam along the edge
Remove the skins from the sausages
Wrap each sausage tightly in pastry and press along the seam with a fork to seal it
Beat an egg and brush the dough with the egg wash
Sprinkle with poppy seeds
Preheat the RidgeMonkey pan and place the sausage rolls in the pan and cook on a low heat for about 4-5 minutes on each side. Keep an eye on the cook as to not burn them
