This recipe is a firm favourite of featured vanlifers @alfredsrollingkitchen. Anne & Pascal are big fans of pasta recipes whilst on the road. Pasta is easy to store in the van with a long shelf life. It is also easy to purchase anywhere, making it a favourite for vanlife. This dish has a sweet element by the addition of cooked apples, which add to the flavour beautifully. Here's a tip from the cooks themselves: Roast some onion rings with a bit of oil in a pan and put it at the end on top of the Macaroni - it is delicious <3
2-3cupsMacaroniPenne can also be used if that's all you have in your cupboards!
2Potatoes(large) or 4 small ones
2rashersBacon
1Onion
1/2Savoy Cabbage
1.5cupsMilk
1.5cupsWater
0.5cupWhite wineoptional
0,5tspCinnamonoptional
50-70gGruyèreor other strong swiss chesse
2Apples
Instructions
Roast the bacon and some chopped onion in a pot.
Cut the potatoes in pieces (2cm pieces) and put it with the pasta together in the pot. Add some milk / water (half/half) till everything is covered and cook it for 20 minutes after adding some salt and pepper (careful, don’t use as much salt as for a normal pasta water, as we do not pour off the water at the end).
While the pasta is cooking chop the apple into pieces and put it in another hot pan. Add a bit of white wine or water and cook it till the apple pieces are soft. We also love to add a bit of cinnamon to it or if you are a sweetie you can add also something to sweeten it.
Try the Potatoes and Pasta, as soon as they are nearly al dente add the copped savoy cabbage in the pot. If you feel like it needs some more liquid just add it.
As soon as the pasta are cooked to your liking add the grated cheese and mix it well.
